Drone flight towards Cascina Pratograsso

Cascina PratograssoCarnaroli · Ticino Park

Before it reaches your table, it begins here.

A gravel track through the rice fields leads to Pratograsso, a farmstead with fifteenth-century origins in Ticino Park.
This is where the story of our Carnaroli begins.

01 · The place

Here, even the fields have names.

Coda del lupo, Prato San Donato, Marcita dell’aia.

These are some of the fields surrounding the farm, crossed by irrigation channels such as the Rile. Their water comes from natural springs, known locally as risorgive: groundwater rises to the surface, keeping a relatively steady temperature as the seasons change around it.

Among the paddies and waterways, we see herons and little egrets. In spring, the hoopoe returns after its long journey from Africa.

Pratograsso belongs to this landscape, within Ticino Park and the UNESCO Ticino Val Grande Verbano Biosphere Reserve.

02 · How we grow our rice

A season’s work.

At Pratograsso, work follows the rhythm of the seasons. In spring, we prepare the soil and sow the rice. Through summer, the fields grow thick and green as the plants flower and the grains ripen.

Harvest comes in September and October. The paddy rice leaves the fields for drying, while the land begins another cycle: we sow legume cover crops, which will be incorporated into the soil to nourish it for the following season.

This year, that story reaches your kitchen with the Pratograsso name on the pack.

03 · The rice

The harvest, in your hands.

After harvest, we entrust our Carnaroli to stone milling: a gentle whitening process chosen to help keep the grains intact and reduce breakage. The rice has a subtle amber hue and is vacuum-packed in 500 g and 1 kg packs.

A season of care and attention goes into an ingredient that is simple to bring to the table. Naturally gluten-free, rice lends itself to many recipes and ways of eating.

Knowing what we grow

We have commissioned external laboratories to test samples of our rice for cadmium, inorganic arsenic and nickel, as well as grain quality and amylose content.

For those who would like to know more, test reports are available on request, including the results and identification of the samples tested.
